Nor'Easter Oyster Co is a multi-faceted aquaculture business, and Southern Maine’s first shellfish processing facility. Our mission is to create new revenue opportunities for local Maine sea farmers by purchasing excess oysters, that would otherwise go unused, and transforming them into premium seafood products.
Nor’Easter is proud to be comprised of a dynamic team of professionals all with unique backgrounds, skill sets, and stories. We view Nor’Easter as both a community and a business, with the shared goal of managing our resources for current and future generations.
Why We Love Oysters
An oyster is a sustainable protein that is the embodiment of the sea. Oysters are creatures infused with the flavors of their environment, and molded by the ebbs of the tides in which they grow. We want to show people that oysters can be malleable. They can be enjoyed on the half-shell with a squirt of lemon, a dollop of caviar, or naked as they came. Or they can be poached in a creamy chowder, smoked on a pizza, or grilled in a bath of chipotle butter.
Why Nor’Easter
Quality oyster farming is a difficult and specialized craft within a challenging natural environment. The water is nurturing some days, and tempestuous on others. Often, nature prevails over human aspirations—so we need to work with nature—not fight against it. Embracing those volatile weather conditions means all oysters are unique—a blueprint of what each oyster endured, but never a compromise on the quality.
